First...
One of the first steps in our Stewed Iberico Pork recipe is trimming the loose hanging fat from the meat and discard it. Then we start cutting the meat into bite-size chunks. The meat is cut to a consistent size so that each bite is as good as the last.

Next...
To blanch the meat, we fill a pot of water and bring it to a boil over high heat.
After that, we submerge it in a bowl of ice water.
In a stock pot made with herbs and spices, we add the pork and bring it to a boil.
We then reduce the heat to low and let the low heat gently do its magic.
We will cook till the meat is tender. This will take about an hour and twenty minutes.
